Kaddu ki Kheer is a Hyderabadi special Dessert made using Milk and Kaddu. This can also be called as Lauki ki Kheer.
It is a special dessert and a favorite of every muslim made in every Hyderabadi household.
It is a very rich, delicious, creamy dessert loaded with heavy ingredients and is one of my favorite desserts. It takes in a lot of time to make this dish in a traditional manner.
It is usually found in many occasions like muslim ceremonies or weddings in Hyderabad. I have tried to share the details of almost the same kind of Kaddu ki Kheer recipe made usually in Hyderabad.
Ingredients
- 2 litter Milk
- 1/2 cup Bottle gourd(Kaddu also called as Lauki or Dudhi)
- 1/3 cup Sago Seeds(Sabudana)
- 1/2 cup Sugar
- 1/2 cup Khoya(also called as Mava)
- 2 tsp Chopped Cashew
- 1 tsp Chopped Pistachio
- 2 tsp Chopped Almonds
- 1 tsp Rose Water
- 1 pinch Green Color
Step 1
- Wash, peel and remove the seeds from the Bottle gourd, reserve only the flesh. Shred it either in a food processor or using a grater.
- To make this recipe we need to first soak the 1/3 cup Sago seeds (sabudana) for few hours until it bulges out and gets soft. Soaking Sabudana reduces the time of making kheer.
Step 2
- Firstly take 2 litre full fat Milk in a sauce pan or pan or kadai. use a heavy and large pan or kadai, so that milk does not spill over and does not burn from the bottom.
- On a low flame or low heat, bring the Milk to a boil. Do stir when the Milk gets heated up, so that it does not burn from the bottom.
- Bring the Milk to a boil.
- when Milk started boiling add 1/2 cup Bottlegourd/Kaddu and 1/3 cup soaked Sago/Sabudana in to the milk.
- Continue to cook milk on low flame till it reduces to ⅓ of its original volume.
- Keep on stirring and remove the clotted cream (malai) which forms on top of the milk and add it back to the milk.
- Also keep on scraping the dried Milk solids from the sides and add them back to the Milk.
- Now add 1/2 cup Sugar and 1/2 cup Khoya mix well, cook it for 10 min.
- After 10 min add 2 tsp Chopped Cashew, 1 tsp Chopped Pistachio, 2 tsp Chopped Almonds, 1 tsp Rose Water and 1 pinch Green Color and mix it well.
Step 3
- Now Kaddu ki Kheer is ready, turn off the flame and keep it in refrigerate for 2 hours.
- After 2 hours, take out in serving bowl and garnish it with some chopped pistachio.
- Now Kaddu ki Kheer is ready to serve.
