Ingredients

For Frying

  • Oil
  • 5 Potatoes 
  • 4 Onions 
  • 1/3 cup Raisins 

For Marinating Chicken 

  • 1 Chicken
  • 1 cup Curd
  • 2 tbsp Ginger Garlic paste
  • 1 tbsp Red chilly powder
  • 1 tbsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Curry powder
  • 1/2 tsp Black paper powder
  • 1 tbsp Salt

For  Zurbian Rice 

  • 3 cup Rice 
  • 2 Bay leaf
  • 5 Cloves
  • 6 Cardamon
  • 2 Cinnamon stick
  • 1/2 tsp Cumin seeds
  • 1 Dry Lemon
  • 2 tbsp Salt 
  • 2 tbsp Oil

For Zurbian Chicken 

  • 5 tbsp Oil
  • 1/2 tsp Cumin seeds
  • Saffron
  • Coriander leaves 

STEP 1

  • Cut the  4 Onions into thin slices. Separate them to get fried evenly. 
  • Fry the Onions in batches to get best results. Stir in between. Fry till dark golden in color. As they will get more colour after cooking, take them out of the oil a bit earlier. 
  • Keep the fried Onion in a colander so that it remains crisp. This is a major ingredient of the Zurbian chicken biryani.
  • Fry the 5 Potatoes  and 1/3 cup Raisins in the same oil for garnishing and keep aside.

STEP 2

Marinating chicken

  • Firstly take 1 whole Chicken cut it into 4 pieces.
  • For Marinate Chicken Grind half of the fried Onion (step 1) along with 1 cup curd into a fine paste. Make gashes on the chicken pieces. 
  • Add the ground mix along with fried Ptatoes, 2 tbsp Ginger Garlic paste, 1 tbsp Red chilly powder,1 tbsp Coriander powder, 1/2 tsp Turmeric powder,1/2 tsp Curry powder, 1/2 tsp Black paper powder, 1 tbsp Salt.  
  • Mix well to coat the Chicken with the marinade. Then keep it for 1 hour and will be ready to prepare the Zurbian Chicken.

STEP 3

Preparing rice for Chicken Zurbian rice

  • Put full of Water pot in a high flame for boiling. 
  • Add all the ingredients 2 Bay leaf, 5 Cloves, 6 Cardamon, 2 Cinnamon stick, 1/2 tsp Cumin seeds, 1 Dry Lemon, 2 tbsp Salt and 2 tbsp Oil.
  • Bring it to boil. 
  • Then add the Rice into the Boiling water. 
  • Cook till 3/4th done (around 5 to 8 minutes, cooking time varies as per rice used). 
  • Drain immediately and keep the rice aside. 
  • Rice is ready for the Zurbian Chicken.

STEP 4

Preparing Zurbian Chicken 

  • Prepare a pot big enough to hold the Chicken and Rice. 
  • Add the 5 tbsp Oil. 
  • Once the Oil is hot, add 1/2 tsp Cumin seeds and saute for few second. 
  • Add the marinated chicken into it.
  • Cover the lid and cooked Chicken foe 30 min on low flame.
  • After 30 min Sprinkle some fried Onion on the Chicken. 
  • Then add  semi cooked Rice on the Chicken. 
  • Pour some Milk infused with Saffron on the rice. 
  • Finally garnish with fried Onion, fried Raisins , chopped Coriander leaves. 
  • Then pour Ghee.
  • Ensure lid is sealed properly to retain the steam. Keep a weight on top of it. Cook over the lowest flame possible for about 20-25 minutes. The pot can be placed on a tawa also, so that it is not on the direct flame.
  • The Zurbian Chicken will the perfectly cooked after 20-25 minutes.
  • Open it. The excellent aromatic Zurbian chicken is ready!!!

Note: The chicken can be kept marinated overnight, to prepare the Zurbian biryani faster on the next day !!
