- Mutton Mandi is a traditional meat and rice dish from the Middle East and is fondly eaten all over the Arabian Peninsula.
- The word Mandi comes from the Arabic word, nada, it means dew and reflects the dewy flavor of the meat used in preparing the dish.
- Its precise origin is Yemen, but now it is eaten in many parts of the Asian subcontinent including Pakistan and some parts of India.
- The traditional Mutton Mandi recipe is prepared by roasting mutton from a small sized and young lamb, to further enhance its flavor.
- Sometimes Mandi is also prepared using chicken, but the traditional Mandi dish consists of mutton prepared in a tandoor.
IngredientsFor marinate mutton
- Goat's thigh
- 1/4 cup Water
- 1 tbsp Lemon juice
- 2 tbsp Olive oil
- 1 tbsp Black paper powder
- 1/2 tbsp Kashmiri red chilly powder
- 1/2 tsp Turmeric powder
- 1/2 tbsp Curry powder
- 1 tbsp Salt
- 1/2 tbsp Cumin powder
- 1 tbsp Ginger Garlic paste
- 1 tbsp chopped Garlic
- Green Capsicum
- Red Capsicum
- Yellow Capsicum
- 2 Tomatoes
- 2 Onion
For making rice
- 3 cup Rice
- 3 tbsp Oil
- 1/2 cup Dried Grapes
- 2 Bay leaf
- 3 Cinnamon stick
- 1 tsp Coriander seeds
- 1 tsp Cumin
- 6 Cardamom
- 1/2 tbsp Cloves
- 1 dry Lemon
- 1 Onion
- 1 Chicken stock
- Saffron water
- 1 Garlic
- 1 Green Chilly
- 2 tsp Salt
Step 1
Marinate Mutton
Marinate Mutton
- For making Mutton Mandi take 1 piece of Goat Shoulder, wash it properly.
- Now we will makes small deep holls with help of fork or knife, so it will cooked well from inside.
- For marinate Mutton take 1 bowl add 1/4 cup Water, 1 tbsp Lemon juice, 2 tbsp Olive oil, 1 tbsp Black paper powder, 1/2 tbsp Kashmiri red chilly powder, 1/2 tsp Turmeric powder, 1/2 tbsp Curry powder,1 tbsp Salt, 1/2 tbsp Cumin powder, 1 tbsp Ginger garlic paste and 1 tbsp chopped Garlic mix well.
- Now add masala on mutton and scrub with hand.
- Take 1 Green Capsicum, 1 Red Capsicum, 1 Yellow capsicum, 2 Tomatoes and 2 Onions.
- Cut it to small size and add in Mutton.
- Mixed well with Mutton.
Step 2
- Now cover the trey with Aluminium foil.
- Firstly preheat oven for 5 min.
- In preheated oven and arrange grill in lower level and put flat pan on it, fill it with hot water.
- Now put Meat trey in Oven 's middle level and set the timer for 2 hour on 180-200 degree Celsius temperature.
- After 2 hour remove aluminum foil and check mutton 's condition with folk if not cooked then put it back again for few minutes more.
- Add surrounded spiced water on mutton with the help of spoon.
- Put the Meat tray again back to Oven without covering In oven set the timer for 20 min to roast cooked mutton.
Step 3
Making Rice
- Soak 3 cup rice before 2 hours so rice become soft.
- Now take pan and add some Oil on it. when oil turnes hot add 1/2 cup Dried Grapes and fry for few minutes.
- In same pain add 3 tbsp Oil.
- When oil turns hot add 2 Bay leaf, 3 Cinnamon stick, 1 tsp Coriander seeds, 1 tsp Cumin, 6 Cardamom, 1/2 tbsp Cloves and 1 dry Lemon, saute for few minute.
- Now add 1 chopped Onion and fry for 2 min.
- Add 1 Chicken Stoke and cooked for 1 min.
- Now add 4 cup Hot Water, mix well. add socked rice in it.
- After adding Rice add 1 Garlic, 1 Green chilly and 2 tsp Salt, mix well.
- Cooked Rice on medium flame fo 15 min.
- After 15 min add Saffron Water and fried Dried Grapes on rice.
- Cover the pan with lid and cooked Rice on low flame.
- After 10 min rice cooked well not take out Rice on serving plate.
Take out rice in large plate and put cooked roasted mutton on top of it, and take out rest of vegetables on other plate as a side dish.
Now delicious Roasted mutton mandi is ready to serve.
