- Achar gosht is a popular dish of the indian subcontinent.
- Its spicy, tangy, pickled curry would rock your taste buds.
- I used to make it with ready made packet masala few years back. But now I use my own spices to make this for special occasions.
- The pickle spices and the aroma of achar gosht will make your loved ones tummy roll.
INGREDIENTS
For Making Mutton
- 1 kg Mutton
- 5 tbsp Oil
- 2 tbsp Ginger-Garlic paste
- 1 tbsp Crushed Coriander seeds
- 1 tbsp Fenugreek leaves
- 1 tbsp Kashmiri Red chilly powder
- 1 tbsp Coriander powder
- 1 tbsp Fennel seeds
- 1 tsp Chat masala
- 1 tsp Red Chilly flakes
- 1 tsp Black seeds
- 1 tsp Cumin powder
- 1 tbsp Salt
- 1 tsp Cumin seeds
- 1 tsp Black paper powder
- 6 to 7 dry Red Chilly
- 4 tomatoes
For Stuffing Jalapeno
- 10 jalapeno chillies
- 1 tsp Kashmiri red chilly powder
- 1 tsp Cumin powder
- 1 tsp Black seeds
- 1 tsp Coriander powder
- 1 tsp Salt
- 1 tsp Cumin seeds
- 2 tbsp Yogurt
Step 1
- In a pan, add 5 tbsp Oil.
- When Oil turns hot add 1 kg Meat. Cook till colour changes. Make sure oil is hot before cooking Meat.
- Once Meat has changed its colour, add 2 tbsp Ginger-Garlic paste mix well and cooked for 1 min.
- After 1 min add 1 tbsp Crushed Coriander seeds, 1 tbsp Fenugreek leaves, 1 tbsp Kashmiri Red chilly powder, 1 tbsp Coriander powder, 1 tbsp Fennel seeds, 1 tsp Chat masala, 1 tsp Red Chilly flakes, 1 tsp Black seeds, 1 tsp Cumin powder,1 tbsp Salt, 1 tsp Cumin seeds, 1 tsp Black paper powder, 6 to 7 dry Red Chilly mix well with mutton.
- Now add 1/3 cup Water so all spices cooked well and not burn.
- After 5 min add 2 grind Tomato paste mix well and cooked for 10 min.
- Now add 3 cups of Water mix well.
- Cover the lid and cooked for 4o to 45 min until meat tender.
Step 2
To make stuffing
- Take 10 jalapeno chillies and cut it in center, remove all the seeds.
- Now take bowl add 1 tsp Kashmiri red chilly powder, 1 tsp Cumin powder, 1 tsp Black seeds, 1 tsp Coriander powder, 1 tsp Salt, 1 tsp Cumin seeds mix well . Add 2 tbsp Yogurt for binding with all spices.
- Now take 1 Jalapeno chilly and filled paste with the help of spoon.
- Do same thing with all Jalapeno chillies.
Step 3- Cooked Meat on low flame for 1 hour Meat is tender very well.
- Now add 2 Tomatoes (cut in small size) and Stuffing Jalapenos chilly in Meat.
- Also add 1/3 cup Water, cover the lid for 10 min.
Now, Achari mutton is ready turn of the flame and take out in serving plate.
